We start with a ceviche: red snapper cured with fresh lime, avocado and a jicama orange chipotle dressing served with basil infused tostones. Hmm. Sounds great right? It is! But then, then comes Marmalade’s world-famous tiny white bean soup with scallions, black truffle oil and pancetta dust. I’ve never tasted a better soup. It has a texture, flavour and aroma all of its own.
